Pumpkin Cheesecake
Ingredients:

3.75 pounds of cream cheese
11.5 ounces of sugar
5 yolks
7 whole eggs
1 ounce of all-purpose flour
1 tablespoon + 1 teaspoon of vanilla extract
2 teaspoons of cinnamon
1 teaspoon of ground cloves
1 teaspoon of ground ginger
Zest of 1 orange
Zest of 1 lemon
12.25 ounces of heavy whipping cream
21.5 ounces of pumpkin puree

Directions:
Preheat oven to 275 degrees F.
Stir the sugar and cream cheese together with a paddle. Fold in the yolks and eggs. Add the vanilla extract and lemon and orange zest. Fold in the flour, cloves, and ginger. Add the heavy whipping cream and pumpkin puree and stir until concoction is blended and smooth. Pour mixture into your favorite piecrust. Bake for 15-20 minutes or until set.
