Now with a new cookbook written by Austin, Texas-based author Laurie Leiker, cooking for one has never been easier.

Laurie Leiker found herself suddenly single; after spending the majority of her adult life cooking for a whole family, she found it almost impossible to find resources to help her cook for herself.  Like most singles, she found herself relying on eating out, fast food, frozen dinners and junk food, especially peanut butter-filled pretzels and Whoppers.  

After a year of eating poorly, spending too much money and gaining a lot of weight, Laurie founded Lonely Gourmet (, a website dedicated to helping singles cook for themselves .
