-- As a celebration of summer, FriendsEAT has partnered up with some of the top chefs in the United States in its Chef's Summer Recipe Series.
Claude Godard is not a mere "Chef". He is a Maître Cuisinier de France, a French association of notable chefs whose goal is to "preserve and spread the French culinary arts, encourage training in cuisine, and assist professional development."
Chef Godard is a New York City institution. His flagship restaurant, Madison Bistro has survived the test of time. Chef Godard recently opened up his second New York restaurant, Jeanne & Gaston in the West Village neighborhood in honor of his grandparents.
Chef Godard shared a recipe for his fresh goat cheese soup with escargot. When asked why this recipe, Godard replied “Cold soup is always very refreshing. This one has a little more texture because of the silkiness of the goat cheese. It’s more than a soup. It ‘s a perfect appetizer.
