Sept. 29, 2011 - PRLog -- Chicago, Ill. — The fields of nearby farms will feel a lot closer when The Signature Room at the 95th hosts the Gully Creek Ranch Beef Dinner on Thursday, November 3.  During this special farm-focused event, guests will enjoy the gastronomical works of Executive Chef Patrick Sheerin as he celebrates the deliciousness of a Red Poll Cow from Dave and Sherry Hickman’s Gully Creek Ranch in West Branch, Michigan. The event held high above The Magnificent Mile begins with a reception at 6 p.m. and dinner at 6:30 p.m. The six-course gourmet menu will be complemented with wine pairings from the premier French Chateau of Barton & Guestier, and costs $125 per person all inclusive.

Sheerin, an advocate for using fresh local produce in his dishes for The Signature Room, will work with Mick Klug Farms, Nichols Farms, Green Acres Farms, Growing Power, and Werp Farms to serve the freshest ingredients to complement his inspired menu featuring the all-natural beef from this 100 percent grassfed, sustainably raised cow. The full menu includes:

Hors d’oeuvres
Beef kielbasa, pickled mustard seeds
Corned beef croquettes
Beef fat French fries; truffle mayonnaise

First Course
Braunschweiger, Bresaola, meat pie
Grilled onions, market vegetables

Second Course
Charred beef tartare and foie gras mousseline
Pickled beets, pumpernickel croutons; truffle vinaigrette

Third Course
Thai grilled beef heart salad
Shaved kohlrabi, little gem, herbs, toasted peanuts; kaffir lime macerated onions

Fourth Course
Slow roasted beef loin
Smoked potatoes, roasted mushrooms; black garlic aioli

Fifth Course
Smoked and braised beef
Vietnamese inspired French onion broth, gruyere gnocchi

Sixth Course
Suet and roasted carrot cake
Black pepper whipped mascarpone; whiskey & clove caramel
