Sept. 15, 2011 - PRLog -- Toronto, ON: Exactly one year after proof whisky was successfully launched in the Ontario marketplace. Michael Riley, creator and proprietor of proof brands inc. is proud to introduce his second spirit in the proof brand series, proof rum.

proof rum was well received in the International Spirits Market this year, when it was awarded a silver medal at the 2011 San Francisco World Spirits Competition. This deluxe white rum is distilled in the Caribbean from luscious sun-kissed sugar cane and reserved in barrels for two years. It then makes its journey to Canada where it is blended in small batches with aged rum and rocky mountain spring water. This process creates a clean, clear and luscious finish. proof rum is bottled at 42% alc./vol., to give it that extra edge.

Here is a great end-of-summer thirst quenching cocktail:
proof watermelon mojito:

lots of mint • 4 oz proof white rum  • 4 oz fresh lime juice (3-4 limes) • 4 oz watermelon juice* • 2 oz simple syrup** • eight 1-inch cubes watermelon, frozen

Place a mint sprig in each of your 4 glasses and muddle by crushing the mint against the side of the glass with a wooden spoon. Stir together rum, lime juice, watermelon juice and simple syrup in a large pitcher, then add watermelon cubes and remaining mint sprigs. Pour rum mixture into glasses. Serve immediately.

*Watermelon juice: To prepare watermelon juice, process peeled watermelon in a blender & strain.   ** Simple Syrup: Combine equal parts sugar and boiling water. Stir until sugar is completely dissolved. Pour into a jar or bottle with a lid, let cool and store in the refrigerator for up to 3 weeks.
