Namazake is a special title that means that the sake was not pasteurized before bottling. Sake is generally pasteurized to kill any bacteria or mould that may infect or ruin the final sake product in some way. Pasteurization also neutralizes specific enzymes that may alter the characteristics of the sake, negatively or positively, before it reaches the consumer".
