Santa Barbara Senior Living Community Names Director of Dining Services

Jim Craddock Elevating Valle Verde's Fine Dining Experience
March 28, 2011 - PRLog -- Jim Craddock says the dining experience at Valle Verde in Santa Barbara already breaks the mold of what you’d typically expect to find at a senior living community. But he’s looking forward to taking things to the next level. As the new director of dining services at Valle Verde, Craddock oversees all aspects of the community’s dining operations.

“I’m excited to be a part of this team, which does a wonderful job of providing quality food and service,” said Craddock. “In my role, I’m taking something that already has a solid foundation and leveraging my expertise to expand and elevate the fine dining experience at Valle Verde.”

In addition, Craddock is drawing on more than 10 years of experience in restaurant management, food and beverage direction, and restaurant ownership. His team serves about 1,200 meals a day throughout the community, and one of his responsibilities is to oversee seasonal menus filled with fresh local produce and lots of options.

“We’re all about quality and choices,” said Craddock. “The majority of our produce is sourced from local suppliers, and residents can enjoy something delicious and specially prepared in our restaurant whatever time of day they like. The My Choice program also provides residents the chance to use a certain number of allotted dining points per month at their discretion at any one of our dining venues. We truly embrace a ‘yes’ philosophy.”

Craddock will also oversee events such as “The Amigos Grill,” during which residents will enjoy a fine dining, Chef Center Stage demonstration. He’ll also be working closely with the resident dining services committee to ensure menus are meeting the needs and desires of everyone at Valle Verde.

“Resident input is very important, and we’re more than happy to accommodate special requests from residents. We also strive to meet residents’ dietary needs and offer heart-healthy meals, which are low in sodium and fat,” said Craddock. “Everything we do is an effort to enhance the fine dining experience at Valle Verde. We’re raising the bar, with the goal of having residents not just eat a meal, but experience dining as an event.”

Craddock received an associate degree from Ulster County Community College in Stone Ridge, N.Y., and is known in the Santa Barbara area, where he previously worked as the owner of California Pasta, food and beverage director at the El Encanto Hotel and general manager of Miro at Bacara Resort.
