Elvis Rodriguez, the founder of Vegetarian Spotlight states “By eating properly, you’re promoting better health.  Look back 150 years.  They didn’t have fad diets because they didn’t need them.  Their diet consisted of mainly natural foods – vegetables, whole grains and even grass fed “organic” meats for those that chose to eat it.  These modern fad diets are being put in place to counter all the junk we’re putting in.  Stop eating junk, start eating natural foods like vegetables and your body will naturally cleanse itself”.

The health message is continually clouded by various sources.  Some say reduce carbs and starches, others insist on exercise without changes to diet, some push supplements.  To get the best results, you should arm yourself with trusted information.  Vegetarian Spotlights will offer free online distribution while featuring articles from licensed health professionals, nutritionists and experts in the industry to supplement the growing database of delicious recipes.

Rodriguez states “We only publish what we personally cook and prepare.  If we get a recipe that looks good, we’ll try it out in our test kitchen.  If it’s terrible then we won’t publish it.  We want people to see that vegetables and the vegetarian lifestyle can have a positive impact and that the food not only tastes great but it’s also easy to prepare.”
