A Masterchef Moment - A Tip From A Professional Chocolatier

Award-winning Cumbrian chocolatier, Jane Cullen from Saunders Chocolates in the Lake District, passes on a professional tip to Masterchef contestants and judges.

April 14, 2011 - PRLog -- An award-winning Cumbrian chocolatier and avid ‘Masterchef’ fan sat down to watch the culinary hopefuls recently and found herself wondering, “Why are these maniacs wasting so much time chopping and grating bars of chocolate?” Jane Cullen is an ex-RAF Flying Officer who served as a Fighter Controller in Belize, Cyprus and the Falklands.  After military life she became mum to a couple of nippers, before entrepreneurship took hold.  Business number one was a busy French baguetterie in Carlisle city centre.  Moving on a few years, chocolate beckoned and a steep learning curve later, her company ‘Saunders Chocolates’ was born.

Now an established and respected chocolatier, one of her Belgian suppliers recently gave Jane a sample of their new, 80% cocoa, darkest-dark chocolate.  As usual, this sample came in the tiny chocolate drops, known as ‘callets’, which are used by chocolate professionals.  It was this smooth, powerful chocolate that sprang to mind as Jane watched the Masterchef hopefuls. Samples have now gone to Masterchef judges Wallace and Torrode with a suggestion that callets should be on the ingredients table in future.
