Why not celebrate National Tortilla Chip Day with this warm, yummy snack from one of our latest cookbook releases, Homestyle in a Hurry? You’ll be glad you did!

BBQ Nachos Deluxe

1.5 lbs. ground beef
16-oz. can refried beans
18-oz. bottle barbecue sauce
20-oz. package tortilla chips
2.25-oz. can sliced black olives, drained
2 8-oz. packages shredded Mexican-blend cheese
Garnish: sour cream

Brown beef in a skillet over medium heat; drain. Stir in beans and barbecue sauce. Simmer until heated through, about 5 minutes. Spread tortilla chips evenly on an ungreased baking sheet. Spoon beef mixture evenly over chips. Sprinkle olives and cheese on top. Bake at 350 degrees for 15 to 18 minutes. Garnish with sour cream. Serve warm. Serves 4 to 6.
