Stonewood Grill and Tavern introduces seasonal dishes for colder months

Stonewood Grill and Tavern is rolling out three seasonal dishes using regionally or seasonally-available goods. One of the dishes is a remarkable Yellow Fin Tuna steak.

Dec. 8, 2010 - PRLog -- Stonewood Grill and Tavern is throwing three new dishes on its signature oak-fired grill as wintry weather arrives, using only this season’s freshest ingredients.

The pantry at Stonewood Grill and Tavern stays about empty, and that’s exactly how Executive Chef Mike Drury likes it. “You won’t find much outside of canned tomatoes in our pantries,” said Drury, vice president of culinary operations. “Our kitchen crew is here very early every morning for our fresh produce delivery. We have always committed to using regionally available, fresh ingredients.” The new seasonal menu items are prepared with regionally or seasonally available goods and are on the restaurant’s menu through the end of winter. One of the seasonal dishes includes a new spin on the classic tuna steak.

“We’ve always had a reputation for our great seafood, and we’ve never carried a tuna steak on the menu. Now is the perfect time to offer a great dish like this with Atlantic waters getting colder; it just makes for a great catch,” Drury said. “In the winter months, as more and more people visit Florida, they simply want to enjoy our state’s great seafood.”

The yellow-fin tuna will be marinated in a sesame ginger sauce and cooked to each guest’s preference over Stonewood Grill and Tavern’s signature oak-fired grill. The dish is served on a bed of wasabi mashed potatoes and topped off with an Asian vegetable soufflé.

Another dish, fresh from Stonewood Grill and Tavern’s test kitchen, is a pork porterhouse entrée served with a port wine and fig demi-glace. The porterhouse cut, which includes portions of both the loin and the tenderloin strip side, is extremely juicy and tender.

“Our executive team selected the pork porterhouse dish after a recent monthly test-kitchen tasting and, frankly, this dish was a pleasant surprise pick,” Drury said. “The test kitchen allows me to see my dishes through other people’s eyes and through their palettes as well. I think they made an excellent choice.”

By mid-January, Stonewood Grill and Tavern will offer a six-ounce trout filet to complement the other two seasonal features.
