The Signature Room at the 95th Takes the Thanksgiving Day Buffet to New Heights

A traditional Thanksgiving feast features the flexibility of buffet selections plus homestyle servings perfect for family gatherings

Sept. 27, 2010 - PRLog -- Chicago, IL  – According to the National Restaurant Association, one in 10 Americans celebrate Thanksgiving Day at a restaurant, and in Chicago over 1,000 friends and families whisk to the top of the John Hancock for The Signature Room at the 95th’s annual Thanksgiving Day feast. The ‘hybrid’ dining experience the team has created allows guests to enjoy a lavish starter and sweets buffet with individual plated main courses and family style dining in between. It’s an elegantly sophisticated dining experience that makes getting together easy.  Executive Chef Patrick Sheerin and his culinary team plan, shop and cook while guests simply dine and catch up with their friends and family.  The holiday event serves guests from 11 a.m. – 7 p.m. and live musical entertainment adds a festive note.  

Each year, the culinary team serves over 2,000 pounds of turkey, including the freshly-carved turkey that each table can take home to gobble up the next day.  The leisurely meal begins with a visit to the grand buffet filled with mouthwatering starters, including snow crab claws, American freshwater caviar, signature Waldorf salad with toasted pumpkin seeds and curry dressing; pumpkin bisque, and charcuterie with assorted mustards and pickled vegetables.

Once the table is seated and ready for the next course, each guest chooses an individual plated main courses that include: slow roasted turkey with shaved Brussels sprouts and giblet gravy; braised short ribs with roasted root vegetables and tamarind jus; seared sea scallops, Cavalo Nero and roasted beet coulis; and silken truffle tofu, wilted greens, wild rice; smoked onion dashi.

Family-style side dishes delivered to each table include: Yukon gold whipped potatoes and gravy; pecan glazed sweet potatoes; cauliflower and broccoli with brown butter and sage crumbles; traditional sausage stuffing; and cranberry chutney and jellied cranberry

Executive Pastry Chef David Schuminsky offers an indulgent selection of desserts to top off a satisfying celebration.  This year, the enticing sweets buffet includes apple crumble pie, classic pumpkin pie, white and dark chocolate mousse cake, spiced éclairs, pecan pie squares, passion fruit cheesecake, cranberry pear parfaits, orange chocolate tarts and more.
