Aug. 24, 2010 - PRLog -- Swelite®, a new multifunctional, non-genetically modified (GMO) pea fiber that contains both dietary fiber and starch ingredients, can reduce cooking losses while improving stability in the processing of poultry nuggets, according to A&B Ingredients a leading developer, marketer and distributor of food ingredients.
   
A&B notes that Swelite’s properties are particularly well suited to aid in the improvement of both texture and yield in poultry nuggets, while providing excellent water-binding properties.  It can bind 10 parts of water by capillary uptake in cold conditions.  Additionally, gelatinization of the starch granules provides a supplementary buffer to the water binding capacity.

According to A&B Ingredients, Managing Director Gil Bakal “What makes Swelite so special is that it forms a matrix within the poultry paste.  It acts as a shape retention agent controlling cooking losses and keeping the product in its original form.  In addition, Swelite acts as a meat extender, thus increasing product economy with the same texture and yield.”

Bakal points out that because Swelite exhibits exceptional water and fat-binding capacity the recipe can be optimized using a paste of 1 part Swelite with 4-6 parts water at a 5-10% incorporation.  ‘The paste can then be used on top of a recipe or it can replace pre-emulsions, meat or fat,” he says.

In cold emulsions Swelite stabilizes 5 parts of water and 5 parts of fat.  In hot emulsions results are even greater, stabilizing 1/6/6 with meat fat emulsions.
