Chef Ikeda’s passion for creativity and seasonality in his kitchen comes to the fore when he prepares five special dishes featuring the ayu sweetfish to compliment Kisso’s fabulous traditional and contemporary menu.

The highly regarded ayu sweetfish is a member of the salmon family and celebrated in Japan as one of the tastiest river fish. Native to the fast-flowing rivers in western Hokkaido and south through Kyushu, the fish is a much anticipated seasonal culinary experience. The mere mention of ayu in Japan will evoke fond memories of summer.

Chef Ikeda’s uniquely Japanese menu has been created to bring out the best in this deliciously sweet tasting fish. Diners can enjoy such inspired delights as ayu shioyaki, grilled sweet fish with sea salt, and yaki ayu nidaimori, uni and mentaiko, grilled sweet fish with sea urchin and spicy cod roe sauce. Other irresistible dishes on the menu include spicy ayu mushi, steamed sweet fish with Thai flavoured soya sauce, and ko ayu tempura, deep-fried small sweet fish tempura. Another dish that simply must be savoured is the exquisite agedashi ayu, wasabi and nori, deep-fried sweet fish with seaweed and wasabi sauce.

Chef Ikeda’s refreshingly seasonal ayu sweet fish dishes are available for lunch and dinner at Kisso throughout July.
