Online Boutique Sets the Tone for Gourmet Marshmallows

Levity Gourmet Marshmallows is the brainchild of entrepreneurs Elisabeth Papadopoulos and Nathan Hollrith.  The two met in Alexandria, VA after graduating from Rice University and Florida State University, respectively.  As recent college graduates, Papadopoulos and Hollrith were facing career challenges in a struggling economy that offered few advancement prospects for the duo.

The couple’s passion for marshmallows began when the two first made the confections as a birthday surprise for Papadopoulos’s mother in 2008.  Inspired, Hollrith and Papadopoulos started to experiment with different ingredients and techniques, developing an innovative flavor range that would eventually become their signature.  They would share their creations at gatherings and during holidays to the delight of their family and friends, but they also began imagining marshmallows in their future.

In 2009, Papadopoulos and Hollrith took a gamble and moved across the country to Las Vegas, Nevada, where they could take advantage of staying with family while establishing their business.  They named their venture, “Levity Gourmet Marshmallows,” in celebration of both the airy texture of their products and the lighthearted spirit that marshmallows elicit.  The gamble proved to be well worth the risk when they opened their online boutique in May 2010 and immediately began filling orders from those looking to indulge in a favorite childhood treat with an updated, sophisticated twist.  “Levity Gourmet Marshmallows has a unique niche product that can flourish even in a downed economy,” says Michael Bindrup of the Nevada Small Business Development Center.
