Prosciutto Quiche Italian Style

Quiche A Baked Dish Based On Custard Made From Eggs and Milk or Cream

May 12, 2010 - PRLog -- Quiche is a baked dish that is based on custard made from eggs and milk or cream in a pastry crust. Usually, the pastry shell is blind baked before the other ingredients are added for a secondary baking period. Other ingredients such as cooked chopped Negroni Prosciutto, vegetables, or cheese are often added to the egg mixture before the quiche is baked. Quiche is generally an open pie (i.e. does not contain a pastry covering), but may include an arrangement of tomato slices or pastry off-cuts for a decorative finish. Quiche is predominantly a breakfast dish; however it is more than acceptable to eat it for lunch or dinner.

6 eggs 1 1/2 cup milk (or cream)
1/2 tsp salt pinch ground nutmeg
1/4 tsp cayenne or chipotle pepper
1/2 cup chopped Negroni Prosciutto
1-2 cups grated cheese, a combination of cheddar, gruyere
1 cup white mushrooms, sliced
3 cloves garlic, minced
1/2 pound fresh spinach, rinsed and chopped
1 pre-baked pie crust

Preheat oven to 325 degrees
Whisk eggs until well-beaten
Add milk (or cream), salt, peppers, and nutmeg and mix well.
Mix in Negroni Prosciutto and cheeses.
Sauté garlic and mushrooms in butter over medium-high heat until soft; add to pie crust Add spinach to sauté pan and cook until wilted; place in pie crust Pour egg mixture over mushrooms and spinach and place quiche in oven
Bake until center is set, about 45 minutes Remove from oven and allow to set for 5-10 minutes before serving.
