DiBiase Named Top Toque at the Porto Vista Hotel

New Restaurant and Special Events Menus Set to Launch in May

April 7, 2010 - PRLog -- The Porto Vista Hotel announced today that Chef Amy DiBiase has been appointed as the executive chef at the boutique property reflective of the sexy style of the 1960s Italian coast and lifestyle.  Most recently the executive chef of Roseville, DiBiase will help create a new menu at the Glass Door to complement the chic and cozy Mediterranean atmosphere, as well as revamp the hotel’s special events and catering operations.

"As one of San Diego’s most acclaimed and accomplished young culinary talents, we are thrilled to have Amy helm the kitchen at our hotel,” said Greg Keebler, general manager of the Porto Vista. "Inspired by her inventive cooking style, we are looking to redesign our menus with a focus on simple, well-executed food made from fresh, local and seasonal ingredients. The goal is to elevate the food and dining experience to the level of our restaurant and rooftop views which are known as some of the best in San Diego.”  

DiBiase hints that the new menu will include dishes evocative of the season and with a Mediterranean flair. “I’ll most likely stay true to my roots which are deep in French and Italian cuisine with a California twist,” said DiBiase. “I’ve had a lot of foodies inquiring about the direction of the menu. Right now we are in the heart of the creation process so we’ll try not to keep them on the edge of their seats for too much longer.”

DiBiase received her formal culinary training at Johnson & Wales University in Rhode Island earning degrees in culinary arts and food service management. She first landed in San Diego 10 years ago working as a sous chef at the original Laurel Restaurant & Bar, now Cucina Urbana. After five years, she was promoted to executive chef at Laurel, before moving on to serve as chef de cuisine at Baleen in Paradise Point Resort & Spa in Mission Bay. For the past two years, DiBiase has served as executive chef for the Point Loma restaurant, Roseville, garnering top reviews.
