NHS catering chefs earn top placing in national cookery competition

March 9, 2010 - PRLog -- THE heat was certainly on for two Cambridge-based chefs who pitted their culinary skills in the finals of this month’s national Hospital Caterers Association ‘hot cookery competition’.

Chefs Michelle Jones and Marlena Domalewska from Lifespan Catering Services in Fulbourn originally cooked up a storm in the regional heat to earn a place in the final at Hotelympia at Excel in London.

A bronze medal was the icing on the cake for the chefs, who competed against nine other teams from around the country.

In Master Chef style - the challenge was to produce a two-course meal for four people, using chicken and seasonal ingredients at cost of £1.90 or less per person.

The meal had to be cooked and served in just 60 minutes.

The chicken breast stuffed with spinach, mushroom and stilton served with creamy mustard sauce, cocotte potatoes, broccoli nicoise and shaved carrots – followed by crispy apple pie with toffee sauce and chocolate garnish – impressed the judges.

Lifespan Catering Services is the catering arm of the NHS shared services provider Anglia Support Partnership, and produces 32,000 portions of food for hospital patients each day.

Head of catering, Trevor Colcomb said: “We are all very proud of Michelle and Marlena who did a magnificent job on our behalf.

“The standard of their food, much of which was locally sourced, spoke volumes and we offer our hearty congratulations to them both.”
