The restaurants were chosen primarily because of the outstanding creativity of their chefs and the exceptional quality of their food. You might wonder why your favorite restaurant does not appear in this guide. Some may have closed; others may have lost their chefs. However, the most obvious reason for exclusion is simply that many restaurants do not meet our requirements for a high standard of cuisine using the highest quality ingredients.
