Daily Grills Intro Gluten-Free Menu

Jan. 21, 2010 - PRLog -- Daily Grill restaurants have introduced a new gluten-free menu available at all locations.  Executive Chef John Sola and R&D Chef Phil Kastel developed the menu for those with Celiac disease, a genetically linked, autoimmune disease affecting nearly 1% of the population.  Several ingredients in food are known to trigger the disease including wheat, barley and rye.  Daily Grills’ gluten-free menu was approved and certified by the Gluten Intolerance Group of North America and since certification they have been introduced on several other Gluten Intolerance sites/affiliates across the country.

According to Daily Grill President and CEO Philip Gay, an integral component for introducing the menu was the thorough education and training of the company’s food-servers.

“We instituted a training program aimed at serving guests following a gluten-free diet,” said Gay.  “Team members both on the floor and in the kitchen learned what gluten is, where it is found, why certain guests follow gluten free diets and how to avoid cross contamination when preparing and serving gluten free meals.”

Gay said that staff received additional instruction on how to answer guest inquiries about accommodating guests adhering to such a diet.  In addition, servers, management and kitchen staff were required to pass a written exam.”

The new gluten-free menu is quite extensive with offerings that include appetizers (seared rare ahi and a trio of hummus), soups (Manhattan clam chowder and gazpacho), a range of salads (Cobb, chopped and grilled lime chicken) and entrees ranging from pan-seared salmon and blackened tilapia to classic grill favorites including filet mignon and double-cut pork chops.

“Celiac disease is a very real condition that has caused those suffering from it tremendous discomfort,” said Daily Grill President and CEO Philip Gay.  “We hope that the introduction of our gluten-free menu offers a sense of comfort to those who need to steer clear of the dietary triggers associated with the condition.”
