Burtons Grill in North Andover Presents Peach Dessert for Smolak Farms Peach Festival!

Aug. 11, 2009 - PRLog -- (North Andover, MA) – In celebration of the peach harvest season, Culinary Director of Burtons Grill, Denise Baron, will be presenting her special peach dessert at Smolak Farms Peach Festival on August, 22 2009. Smolak Farms offers their fresh seasonal fruit featuring 40 different varieties such as: yellow peaches, white peaches and nectarines. Chef Baron will be sharing her special peach dessert recipe with attendees during a special demonstration at the farm. Chef Baron will use Smolak Farms peaches to prepare her stewed peaches, which are delicately placed over coconut gelato and paired with shortbread cookies.

Peach Dessert Recipe
Ingredients:

6 Freestone Peaches
3 Tbsp Butter, Unsalted
2 Tbsp Brown Sugar
Pinch Kosher Salt
Pinch Black Pepper
Pinch Cinnamon
12 Shortbread Cookies
6 Scoops Coconut Gelato

Directions:

1.  Drop peaches in boiling water for 30 seconds and drop them into an ice bath
    immediately after. Remove the skins.

2   Cut peaches in half and remove the pit.

3.  Place the cut side up in an oven proof pan.

4.  Mix together butter, brown sugar, salt, pepper and cinnamon.  Evenly distribute
    butter in center of peaches (pit area).

5.  Put a couple a 1/4 cup of water in bottom of pan and place pan in 350° for 20-25 minutes.

6.  Peaches should have an al dente texture to them because they will continue
if you are serving them later. If you are serving directly out of the oven they should be a  little more cooked than al dente but it is personal preference.

7.  To serve place 2 sides of peaches in a shallow bowl with a scoop of coconut gelato and
    2 shortbread cookies per serving.

Note:  Peaches can be made ahead of time and reheated in a microwave.

Smolak Farms:
