WHERE: Smolak Farms, 315 South Bradford Street, North Andover, MA 01845 WHEN: Saturday August 22, 2009 from 12:30PM – 1:30PM Don’t miss this special dessert presentation by Culinary Director of Burtons Grill! After the presentation, stop by the farm stand to pick up your very own juicy peaches and try Chef Baron’s recipe at home! Peach Dessert Recipe Ingredients: 6 Freestone Peaches 3 Tbsp Butter, Unsalted 2 Tbsp Brown Sugar Pinch Kosher Salt Pinch Black Pepper Pinch Cinnamon 12 Shortbread Cookies 6 Scoops Coconut Gelato Directions: 1. Drop peaches in boiling water for 30 seconds and drop them into an ice bath immediately after. Remove the skins. 2 Cut peaches in half and remove the pit. 3. Place the cut side up in an oven proof pan. 4. Mix together butter, brown sugar, salt, pepper and cinnamon. Evenly distribute butter in center of peaches (pit area). 5. Put a couple a 1/4 cup of water in bottom of pan and place pan in 350° for 20-25 minutes. 6. Peaches should have an al dente texture to them because they will continue if you are serving them later. If you are serving directly out of the oven they should be a little more cooked than al dente but it is personal preference. 7. To serve place 2 sides of peaches in a shallow bowl with a scoop of coconut gelato and 2 shortbread cookies per serving. Note: Peaches can be made ahead of time and reheated in a microwave.
