July 5, 2009 - PRLog -- I would like to share with you a gift -- a South West-style gift -- this is absolutely the best darn Pinto bean recipe I have ever...ever... had in my life. Even better the next day, then the next...then the next... Little bit of work goes into it, but definitely worth it. Goes fantastically with a beer, ice tea, milk and Coke, whatever.

It was found in a Mexican cook book and the most amazing thing is...IT IS PRACTICALLY FARTLESS. It's great any time of the year.

Fartless Pinto Beans

16 oz. pinto beanz
6 cups good water
1 Seasoning Packet: (6 spices)

Optional: 1/2 cup fresh chopped cilantro thrown in at last minute
Optional: 2 Slices of Bacon (chopprd)
Optional: 1 pound ground beef
Optional: 1 small onion, chopped
Optional: 1 large green bell pepper, chopped
Optional: 1 (6-ounce) can tomato paste

2 cups pinto beans, rinsed, sorted, one tbsp. apple cider vinegar soaked for 4 hours and then drained.

PLACE water and beans in large stockpot. Bring to a boil. Reduce heat to low; cook, partially covered, for 1 1/2 hours or until beans are tender.
Add seasoning packet; and any of the optional items and cook for additional 30 to 60 minutes or CROCK POT.
You will have a very rich, gravylike pot of killer, ALMOST FARTLESS, beans.

Grannies Buttermilk Cornbread

"This is grannies cornbread recipe and it's the best - sweet and moist!"

PREP TIME 15 Min
COOK TIME 40 Min
READY IN 55 Min

INGREDIENTS
1/4 pound butter
2/3 cup white sugar
2 eggs
1 cup buttermilk
1/2 teaspoon baking soda
1 cup cornmeal
1 cup all-purpose flour
1/2 teaspoon salt
1 small can chopped green chiles or 1/2 cup chopped green bell pepper

DIRECTIONS
Preheat oven to 375 degrees F (175 degrees C). Grease an 8 inch square pan.

Melt butter in large skillet. Remove from heat and stir in sugar. Quickly
add eggs and beat until well blended. Add chiles or bell peppers.

Combine buttermilk with baking soda and stir into mixture in pan. Stir in cornmeal, flour, and salt until well blended and few lumps remain. Pour batter into the prepared pan.

Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted in
the center comes out clean.
