May 22, 2007 - PRLog -- At http://www.thebigbrit.com we've been testing many recipes looking for a great rib recipe for Memorial Day weekend, and we think we have found it!

Best Ribs In The Universe is a recipe by Mike Scrutchfield that won 1st place at the 1996 American Royal Invitational. This recipe is also affectionately referred to as "BRITU". If you want to make some great ribs then you can't go wrong with this recipe, just remember the rub and the cooking process go together, don't expect to BBQ good ribs by using just half of the recipe.

The Rub

1/4 cup sugar
1/4 cup non-iodized table salt
1/8 cup brown sugar, dried
4 tspns chili powder
2 tspns ground cumin
1 tspn Accent (MSG)
1 tspn cayenne pepper
1 tspn black pepper, freshly ground
1 tspn granulated garlic
1 tspn onion powder

1. Dry the brown sugar out by spreading out on a cookie sheet for several hours
2. Mix all the ingredients in an air tight container

The Cooking Process

1. Remove the membrane from your chosen pork baby back ribs.
2. Dust the ribs with some Best Ribs In The Universe Rub and leave to stand for two hours at room temperature.
3. Prepare your smoker for smoking at 225°F. Wood suggestions are white oak and/or cherry.
4. Smoke the ribs for approximately five hours at 225°F until they pull apart easily.
5. Brush both sides of the ribs with a 5 to 1 ratio of KC Masterpiece Original Flavor BBQ Sauce to honey.
6. Eat immediately!
