PRLog -- What college student wouldn’t want a class all about pizza? This semester at the University of Nevada Las Vegas, instructors and Metro Pizza owners John Arena and Sam Facchini have been teaching students how to create a successful pizzeria in their course: Pizzeria Concept Development (FAB 366A). Will these students create the next big pizza concept? We’ll know in a few weeks.
Pulling from decades of personal restaurant experience and utilizing the book, Pizza: A Slice of American History (ISBN 978-0760345603) by pizza journalist Liz Barrett, Arena and Facchini’s class promises that by the end of the fall semester, each student will be able to describe the historical development and anthropology of pizza; classify pizza products by regional, geographical and stylistic variations; demonstrate the fundamental techniques of pizza dough production; and create a professional business plan for a new pizza concept.
“The final class presentation will be made to a group of prominent business leaders including a banker, a real estate developer, and a restaurant executive who grade on viability and conceptual consistency,”

Pizza: A Slice of American History as the required text because the book offers an accurate and accessible inside view of the people and events that have shaped the pizza industry; I consider it essential reading for any aspiring pizza entrepreneur.”
