Prasino St. Charles Executive Chef Tony Marchetto Receives Produce Excellence in Foodservice Award

National Award Honors Chefs for Innovative and Influential Use of Fresh Produce

ST. CHARLES, Mo. - July 15, 2015 - PRLog -- ST. CHARLES, MO – Each year, the United Fresh Produce Association recognizes chefs across North America for the creative use of fresh produce in their menu development. Prasino St. Charles Executive Chef Tony Marchetto was among this elite group of honorees, winning the 2015 Produce Excellence Foodservice Award for the Fine Dining category.

More than 130 nominations were received and evaluated by a panel of judges who considered everything from the menu offerings to food preparation, safety and storage processes, as well as leadership in produce-related community activities. Marchetto puts all of these characteristics to work each day at Prasino St. Charles, developing exquisite dishes that incorporate fresh produce, eggs, meats, and sustainable seafood that is predominantly locally sourced.

“When I set out to develop the menu at Prasino St. Charles, I knew our goal was to live up to the meaning of the word “prasino,” which is Greek for green,” said Marchetto. “This allowed me a great deal of creativity in using fresh produce in new ways that creates a dining experience that people return for time and time again. I am honored that these practices I feel so passionately about have resulted in this prestigious recognition.”

Only seven chefs from around the country received the 2015 Produce Excellence Award. In addition to the Fine Dining category, winners were honored in six other categories including Business in Industry, Casual and Family Dining, Colleges and Universities, Hotels and Healthcare, K-12 School Foodservice, and Quick Service Restaurants.
