Blueberries. Rich in fiber, antioxidants and disease-fighting phytonutrients, regular consumption of this superfood has been shown in studies to reduce the incidence of cognitive decline in the elderly, lower blood pressure, reduce the incidence of heart attacks in women and help to curb obesity. Tomatoes. Eating more vitamin-C rich foods, such as tomatoes, may reduce wrinkles and skin dryness, because their antioxidant properties may protect against harmful ultraviolet rays. This member of the nightshade family also boasts a high concentration of vitamin A, B vitamin folate, antioxidants such as carotenoids and flavonols and the cancer-fighting phytonutrient lycopene. Look for fresh, farm-grown tomatoes in mid to late summer, depending on where you live. Remove the stem, and juice the tomato whole for a taste of summer; combine with lemon and basil for an extra flavorful punch.

Kale. This dark-green leafy vegetable is the nutritional darling of the moment, and rightfully so. Kale is packed with vitamins C, A, K and B-vitamin folate, alpha-linolenic acid, an omega-3 fatty acid, and phytonutrients lutein and zeaxanthin, which benefit eye health. It also contains beneficial minerals such as potassium, calcium, zinc and phosphorus. A one-cup serving of kale contains three grams of protein and 2.5 grams of fiber. Kale has been shown in studies to reduce the risk for cancer of the bladder, breast, colon, ovary and prostate. This cruciferous vegetable helps the body detox, and contains more than 45 types of disease-fighting phytochemicals, including kaempferol and quercetin to help reduce inflammation. Try it combined with carrots or apples for a perfect morning pick-me-up.

Red bell peppers.  Sweeter and milder than the less mature green variety, just one medium red bell pepper boasts twice the daily recommended intake of vitamin C, about 25 percent of the daily requirement for vitamin A, as well as essential B vitamins and minerals potassium, manganese, calcium, iron, magnesium, phosphorus and zinc. Red peppers are also a good source of phytonutrients lycopene, which may help in fighting prostate cancer and lutein, which may protect against macular degeneration. Combine with cucumber and lemon, or even with strawberries.
