Diners at Delray Beachside Restaurant Can Now Watch the Pasta They'll be Eating as it's Being Made

(Delray Beach, FL – January 19, 2015) Caffe Luna Rosa, recently named Restaurant of the Year by the Delray Beach Chamber of Commerce and winner of the third annual Best Bite on the Ave competition at Crane’s Beach House Hotel, is now offering guests fresh pasta made daily in a new pasta-making room visible to guests

The brainchild of Executive Chef Ernesto DeBlasi, the new station includes a large glass window, making it possible for guests to see the pasta they may be eating actually being made in a sealed room.

"We've had guests request a table right in front of the new station so they could watch the pasta being made while they’re eating their dinner,” DeBlasi said

With the new pasta-making booth, in the back of the restaurant next to the kitchen, DeBlasi is using an imported Italian pasta machine to create pasta in shapes and flavors that the restaurant couldn’t previously offer.

Equally important, he says, is the ability to ensure the pasta meets the restaurant’s high standards.

"With the ability to create the pasta right here in the restaurant comes the freedom to select the products that go into the product,” he said.

At Caffe Luna Rosa, DeBlasi uses mostly eggs instead of water to create a high-protein pasta and made with only Eggland’s Best Eggs.

"You're probably not going to get the high level of quality of fresh, daily made pasta anywhere else in the area,” he said.

With the new pasta machine, DeBlasi can now offer pasta in a variety of shapes including creste di gallo, fusilli bucati and rotini. Other specials include 75 percent whole-wheat pasta and homemade ravioli along with cavatelli made with an attachment DeBlasi hand crafted.

"The new cuts of pasta have the entire kitchen inspired to create new sauces,” he said.

Thanks to the new machine and the pasta-making station, Caffe Luna Rosa is one of just a handful of South Florida restaurants making pasta onsite.

"Very few restaurants in the area have the opportunity to make their pasta every day and serve it fresh daily,” DeBlasi said
