SOLINGEN, Germany - Oct. 29, 2014 - PRLog -- The first contact is made through the eye. The grip to the handle follows immediately: Chef's Knives want to be touched. It is not the blade that leads but the hand, which should feel immediately comfortable doing so. Thus, the JANUS chef's knives by Nesmuk turn out to be a lucky touch from the beginning.

The hand cannot be deceived. It is a very sensitive organ with more than 17,000 sensory cells just in the palm. If we take something in our hand the hand and forearm muscles are automatically adjusted in order to trigger the movement action. The more uncomfortable our perception is the quicker tensions and faulty handlings may occur.

Guided by this knowledge, Nesmuk puts particular importance on the manufacturing of knives that follow an ergonomically perfect design allowing for tire-free, accurate and safe operating. Thus, the Nesmuk JANUS offers surprisingly easy controllability, levelled balance and excellent cradling – features that are especially appreciated by ambitious chefs in the gourmet industry and their knives.

The handle is solid and seamlessly crafted out of one piece including a brushed stainless steel collar. There is a choice of various precious woods, four coloured micartas and juma ensuring a very comfortable haptic as well as visual experience

Maximum functionality is another aspect, to which Nesmuk pays particular attention through passion and craftsmanship. The blade has a thickness of 4 mm, a hardness of 60 -61 HRC and is made of stainless high performance steel with niobium content. Niobium is a very rare heavy metal that equips the steel with an very fine microstructure. The blade is significantly denser and tougher having a positive effect on service life, edge retention and sharpness.

Additionally, it is further refined by a high-quality Diamond-Like-Carbon (DLC) coating delivering exceptional hardness (2,300 Vickers), low friction values and high adhesive strength. In order to reduce the basic weight, the blade is manually flat ground on the one side and completely hollow ground on the other side. The knives glide effortlessly through the material to be cut.
