Chef David Schofield has worked in prestigious Michelin star restaurants in Europe and the UK and has twice been voted New Zealand Chef of the Year. Schofield started his career in New Zealand before relocating to London and later working his way through Europe learning the ropes in some of the world’s finest restaurants. David’s culinary adventure took him from London to the South of France and a selection of one, two and three Michelin starred restaurants in between. David has competed in several international culinary competitions, gaining gold and silver medals and setting records that still stand today. David's style would best be described as honest and straightforward with seasonal produce taking center stage. “I love sweet & sour and hot & cold pairings as well as matching flavours from different cuisines,” he said. “That’s why I was so excited about the opportunity to come and work with John McLeay. He’s a master of Asian cuisine and I’m excited about working with him and seeing what he does with the Asian palette of flavours. I love the complexity and depth of Asian food, street food and finer dining, so when the chance to work with one of Melbourne's leading lights came up I jumped on it," Schofield said. Although a convert to some of the science of “molecular gastronomy” David believes the taste and texture of natural products should be showcased and enhanced, not veiled, a philosophy very much in keeping with John’s love of fresh, clean Asian ingredients and flavours. David's first role is working on the groups' Burma Lane restaurant with new Burma Lane Head Chef, Johan van der Walle, bringing the food offering in line with the revamped more sophisticated front of house. "I've been excited about Burmese food for a few years now" said Executive Chef John McLeay, "and I've been looking for a slightly different approach from Red Spice Road and Red Spice QV. We want the buzz and excitement of an Asian market but with a more refined atmosphere and delicate elements to the food. The smaller scale sophisticated Burma Lane space, at the Paris end of Little Collins Street, is the perfect venue and David and Johan are the perfect guys to make it happen." said McLeay.
