Liquid Glucose and MDP


Broken Rice is by-product of Rice Mill and has 70% -72% starch.Malto Dextrin Powder and Liquid Glucose can be manufactured by using Broken Rice as raw material that is easily available in the market. Starch is polysaccharide unit of Carbohydrate. Glucose found in Rice. While manufacturing these products, a byproduct named as Gluten is also extracted.

Molecular formula of Liquid glucose is C6 H12 O6 and is a fundamental ingredient in many food and industrial products.

It is a purified concentrated viscous solution of nutritive saccharides obtained from starch. The solids are composed of various carbohydrates such as dextrose; maltose and higher saccharides, the different carbohydrate profiles compiled with various available solids levels give liquid glucose its unique functionalities. The quality of liquid glucose has a direct impact on the quality and performance of the finished product.

Liquid Glucose is clear viscous syrup derived from broken rice. This syrup is used in applications such as starch based products, food industry, ice creams, candies, soft drinks, diet sodas, pharmaceuticals, tobacco industry. Broken rice in which starch molecules are present, directly liquefied by catalytic process using enzymes.

This process breaks down starch components into linear chains and converted into dextrose. There are main approaches to producing Liquid Glucose from broken rice by Liquefaction of starch obtained from broken rice. Then evaporation is done to get Liquid Glucose more concentrated. Drying process is doing to get Malto dextrin in dry form.

Liquid glucose and Malto-Dextrin Powder are used in almost every type of confection, particularly hard candies. It is primarily used to control sucrose and dextrose crystallization in confections. Candies made out or sucrose alone are subject to crystallization.

Liquid glucose is an economical source of fermentable solids and a popular choice in the baking industry it provides sweetness and density control to cake and cookies. Liquid glucose store in drums in a clean dry area, at room temperature. once opened, should be kept in tightly closed container in a ventilated area if use is not for a long time.

Manufacturing Process of Liquid Glucose and MDP

Broken Rice is the raw material of Starch. Starch is basically polysaccharide units of carbohydrates. Starch is converted into dextrin by enzymatic process using enzymes as alpha-amylase. This process breaks down starch components into linear chains and converted into dextrose. Starch has two components in rice-

1. Amylose

2. Amylopectin

Amylose is straight chain component of starch that is connected to 1-1000 molecules. Alpha amylase enzyme is attached directly into the branched chain of starch component and Amylo-glycosidase is attached into the straight chain of dextrin component. Finally it comes in a viscous form after jet cooking and resultant starch slurry is known as mixture of glucose and dextrin units.. This viscous Slurry get convert into Semi viscous form. Semi viscous form obtained by saccharification Process by the catalytic process. After two to six hours we get desired Dextrose Equivalent.
