Sesamin protects the liver from oxidative damage. Phytosterols are compounds found in these seeds in large quantity they have a chemical structure similar to cholesterol, if they are present in the diet in sufficient amounts they can reduce blood levels of cholesterol, enhance the immunity and decrease risk of certain cancers.

India produces a wide variety of Sesame seeds varying in color from white to red to black, with oil content varying from 40 to 50 %.There are two type of it the white and black Indian Sesame seeds are used for direct consumption because of its addition in several foods and for exports. Oil is mainly extracted from the brown ones. These have oil content of around 45-50 %. The white Indian Sesame seeds has the desirable nutty taste and are mainly used for making sweets, baked foods and for confectioneries. The black Indian Sesame seeds are used by the chefs for seasoning and for fries. They are abundantly produced in india so in indian markets they are available easily but there is always doubt about the quality.
