The non-GMO lentil is a natural powerful food providing a long list of health benefits which include; being gluten free, the capacity to reduce cholesterol, high in protein and antioxidants, and is an excellent source of prebiotic and natural fiber. Despite America’s high awareness of fiber’s positive effect on health, consumers have limited knowledge about their own daily fiber consumption targets. The results of the Datamonitor survey show more than half (52%) of active fiber consumers think they are achieving their required daily amount of fiber. However, of that proportion, only a fifth (22%) was able to point out the correct amount of fiber intake¹. Ms. Deshmukh, President and founder of LensCulinaris recognized this misconception many years ago and through her dietician practice began a quest to educate her patients, one at time, on the importance of soluble and non-soluble fiber in the everyday diet.
