Growing up in West Virginia, Chef Taylor enjoyed growing food in his family’s vegetable gardens and then cooking it to his own tastes. He brings that passion for local food to Jack Dusty, constantly looking for new sources for the freshest sustainable products.

Chef Taylor feels that every ingredient has a purpose and tries to please the palates of all Jack Dusty guests. Always curious about the history of the products he is cooking with, he is a voracious reader on all things food. In the kitchen, you can find him meticulously inspecting all ingredients for that day’s service.

Taylor’s culinary heroes run the gamut from pioneers like Julia Child and Jean-Louis Palladin to Gordon Ramsay or any of the five Master Chefs who have mentored him. Current inspirations are more easily accessible – namely, farmers and fishermen, who influence specials in the restaurant every day.

As Jack Dusty enters its second year, Taylor wants to keep the menu exciting and evolving to keep guests returning again and again. The most popular dish on the menu is the Crab & Fried Green Tomatoes, with Grouper Etouffee being a close second. But when asked what his favorite meal is when he’s off: “My wife’s meatloaf. No contest.”
