It's Hip 2 Be Square At Genji Sushi

LOS ANGELES - Feb. 13, 2014 - PRLog -- WHAT: Genji Sushi has launched a new line of boxed-style Hako Sushi available now at all Genji Sushi restaurants located within select Whole Foods Market locations nationwide.

Hako Sushi is prepared by forming the rice into a rectangular sushi mold called an oshigata.  Toppings are carefully layered with ingredients cut to neatly fill the oshigata mold.  Genji's Chef Takao Iinuma, protégé of Iron Chef Masaharu Morimoto, has put his spin on traditional Hako, which is typically made with cooked or cured ingredients, by incorporating pickled and raw ingredients like pickled mango and raw wild salmon.

Genji chefs are serving two signature rolls ready for grab-and-go or made to order.  The Snow Crab Hako Roll includes Yukari, a dried Japanese red basil powder, roasted red pepper and hot mayo, and the Wild Salmon Hako features pickled mango, chives and Yukari.

Customers can also try a sampling of the rolls with the Hako & Kanpyo Roll Combo that includes four pieces of either the Snow Crab Hako or Wild Salmon Hako and six pieces of Kanpyo Roll, a sweet braised Japanese squash.  For those interested in sampling both Hako, the Hako Mosaic is comprised of six pieces of both Wild Salmon Hako and Snow Crab Hako.
