About the Authors Gillian Olins and her husband, Peter, have spent most of their careers developing novel therapies for diseases in fields including autoimmunity, allergy, cancer, gastrointestinal, and cardiovascular diseases. Gillian was born in New York, but spent much of her childhood in the U.K., where she and Peter both earned their PhDs in biochemistry. Since then, they have made their home in the U.S. and currently live in Fort Collins, Colorado, which gives them access to all the outdoor opportunities that come from living right next to the Rocky Mountains. In 2010, they developed a keen interest in the field of celiac disease and gluten sensitivity which was sparked by different family members who were diagnosed with celiac disease, gluten sensitivity, or wheat allergy. After reviewing much of the information on these topics readily available on the Internet and other media, they realized that much of it was of poor quality, or even wrong. So, they created the website Ultimate Gluten Free (http://ultimateglutenfree.com), which launched in February 2011. The site provides carefully researched information about gluten-related health issues, useful resources, a calendar of events, plus a nationwide database of restaurants and other businesses that serve the gluten-free community. In many ways, biochemistry is rather like cooking, and Gillian and Peter are avid cooks.
