Audits frequently make people so nervous that they take twice as long to perform. Food Safety Scientist from an international baking organization experienced this first hand during one of her first BRC audits. “We had a few temporary employees working at that facility. There was one temporary employee hired just a week before the audit,” noted the food safety scientist. During the audit, the temporary employee was carefully watching another employee dump an ingredient, an act he continued to do for five to seven minutes. After the dumping was completed, he caught the auditor’s attention, who laughed. The temporary employee was very cautious not to do anything wrong; making the whole process take longer than it should have.
