“Detox drinks may work like a charm, but are not known the best tasting thing in the world,” admits Pedersen. “However, unlike those detox drinks, this shake actually tastes good, and works like a holiday miracle long after that special holiday kiss expires.”
The drink’s super-food ingredient is kale, which provides all the antioxidants needed to support your body as it gets rid of the unhealthy food choices in which we indulge during the holiday season. Pedersen has written all about this amazing super-food in her book “Kale: The World’s Most Powerful Super Food.” (http://amzn.to/
“Kale – the vegetable and the book – is a life-enhancing gift which keeps on giving,” she says.
Of course, heavy meals or rich foods consumed during the holiday festivities can make anyone feel sluggish going into the New Year, says Pedersen. This drink, with the consistency of a smoothie, can cure the post-holiday blahs, reward the past year’s hard work, and help keep the resolution to live and be healthier in 2014.
Today, Pedersen shares her signature recipe for the delicious “Mint Kale Detox Drink,” to support healthy choices by merry-makers the world over, now and in the year to come.
1-1/2 Cups Coconut Water
½ small avocado
1 tablespoon fresh mint leaves
1 small cucumber (such as a Persian cucumber), peel removed
1 packed cup baby spinach leaves
Juice of one lemon or lime
Optional: Up to one tablespoon local honey
Optional: A few ice cubes
1. Add all ingredients to a high power blender and whir on the highest speed until completely liquefied and smooth. If needed, add additional coconut water or water to adjust the consistency.
