WEST PALM BEACH, Fla. - Nov. 22, 2013 - PRLog -- Direct from Uruguay, Caviar Master, Roman Alcalde, Owner of Black River Caviar, recently provided an illuminating presentation to staff and customers at one of Palm Beach County’s premier seafood businesses, Cod & Capers Seafood located in North Palm Beach.

Introducing the production of caviar as “an art more than a science,” Mr. Alcalde proceeded to entertain the group with his years of field study in places including Russia, Iran, China, and Europe.  While the Caviar Master has the ultimate control of the caviar recipe, Mr. Alcalde explained that Black River Caviar utilizes scientific controls to monitor everything from the feed ingredients to actually micro-chipping the individual fish in order to produce caviar of the highest quality. Out of 200,000 fish, they have approximately 30,000 microchipped at any given time.  According to Mr. Alcalde, this allows them to treat each fish as an individual and not as a school.  This also allows them process each fish at the right time rather than harvesting seasonally.

As a point of reference, he explained that it takes about 7-8 years for a fish to mature enough to produce the eggs and it takes about three fish to prepare a batch of 8 kilos of caviar.  And as Mr. Alcalde likes to mention, “In the processing of caviar, you can ruin eight years of work in 15 seconds.”

Black River Caviar’s location in Uruguay is another key to the incredible quality of the caviar.  “We like to say that our fish never swim in the same water twice.” boasts Mr. Alcalde.  This is due to the farm’s location at the Baygorria Dam which utilizes water from the Rio Negro River (the largest tributary to the Amazon River) in such a way as to mimic the real flow of the river.  They use gravity rather than electric pumps to move 2,000 liters per second over the fish.
