John Caluda takes up a new venture, Caluda’s King Cakes

John Caluda, of the famed Caluda’s Cottage Catering and Bakery, recently acquired Dianne’s King Cakes (which he managed and operated for the last 5 years) and will now be leading the venture under his new label: Caluda’s King Cakes.

HARAHAN, La. - Nov. 13, 2013 - PRLog -- John plans to continue the production of the finest Mardi Gras King Cakes in the city. This change has brought  a new service line to his popular brand, Caluda’s Cottage Catering and Bakery.

King cakes are a Mardi Gras tradition from the late 1800s. As part of the Twelfth Night after Christmas celebration, these oval-shaped cakes are baked in honor of the three kings. Traditionally they are simple confections of Danish dough, cinnamon, and sugar. King cakes can also be filled with cream cheese, raspberry cheese, strawberry, pralines, fresh apples or a combination of these ingredients. This popular confection is now going to be available in a savory flavor as well. The bakery is bringing back their extremely popular Crawfish King Cake©. This cake is a rich dough filled with sautéed crawfish in a pepper cheese sauce and topped with colored Romano cheese–  similar to  Crawfish bread, but much better.

John Caluda is a huge advocate for local outreach and likes to keep the popular tradition of king cake parties in the community. Caluda’s Cottage Catering and Bakery soon plans to host a Kings Day $25,000 local charity event. Caluda’s Cottage Catering and Bakery will donate 100% of its sales on this day to benefit three local charities: Team Gleason, Animal Rescue New Orleans (ARNO), and Fallen Heroes.

How it works: Customers receive a token with their king cake purchase, which they assign to the charity they wish to support.  “At the end of the day, the organizations will split the proceeds from the king cake sales based on the amount of tokens they receive from the public,” says Lesley Forynski, catering manager.

John Caluda
graduated from the Culinary Institute of America in Hyde Park, New York. Upon graduating, he worked his way up to Pastry Chef and then opened the Coffee Cottage, which became known for fresh hand-crafted pastries in the community. John Caluda closed his shop after the devastating Hurricane Katrina, and went into catering, but never lost his love of pastries. He became partners with Dianne of Dianne’s King Cake before solely acquiring the company and renaming the shop Caluda’s King Cake.
