Gluten-Free Recipes Created to Appeal to Celiacs and Non-Celiacs
 
FORT COLLINS, Colo. - Nov. 5, 2013 - PRLog -- Gillian and Peter Olins, co-founders of the Ultimate Gluten Free website, have released the Gluten-Free, Deliciously! Main Dish Recipes cookbook, the first in their new series. If you need to cook gluten-free, for yourself or someone else, this will be your go-to cookbook for years to come. The recipes are easy to follow, include cuisines from around the world, and have been taste-tested by family and friends. The book includes chapters discussing gluten food safety issues, helpful cooking tips, and more!

“Several of our family members and friends have celiac disease or gluten sensitivity, and must eat gluten-free to address their medical needs,” said Gillian. “So, we decided to create recipes that would be gluten-free, delicious, and enjoyable for everyone”.

About the Authors
Gillian Olins was born in New York, but spent much of her childhood in the U.K., where she and her husband, Peter, both earned their PhDs in biochemistry. Since then, they have made their home in the U.S. and currently live in Fort Collins, Colorado, which gives them access to all the outdoor opportunities that come from living right next to the Rocky Mountains.

Gillian and Peter have spent most of their careers developing novel therapies for diseases in fields including autoimmunity, allergy, cancer, gastrointestinal, and cardiovascular diseases.

In 2010, they developed a keen interest in the field of celiac disease and gluten sensitivity which was sparked by family members diagnosed with celiac disease, gluten sensitivity, or wheat allergy. After reviewing much of the information on these topics readily available on the Internet and other media, they realized that much of it was of poor quality, or even wrong.  So, they created the website, Ultimate Gluten Free (http://ultimateglutenfree.com), which launched in February 2011. The site provides carefully researched information about gluten-related health issues, useful resources, a calendar of events, plus a nationwide database of restaurants and other businesses that serve the gluten-free community.
