By: Latino Life Media Chef Jorge Espinoza, who owns Haab along with partners Ruffino Zamacona and Joaquín Velasquez, says the impetus for opening the second restaurant came from Park Slope residents, whose frequent patronage of the Williamsburg original suggested growing demand for Haab's dishes. The three partners later fell in love with Park Slope, a bustling neighborhood known for its tight-knit families and distinctive architecture. They envisioned a restaurant where all Park Slopers, from parents and their children to the neighborhood’ Espinoza, who hails from the Mexican seaside town of Puerto Morelos, was consumed by cooking and commerce at an early age while frequenting and eventually managing neighborhood food stands, where he refined an ability to select only the freshest ingredients. His journey would bring him to New York City, where for 15 years he practiced the celebrated techniques of French cooking. Espinoza says a French coworker suggested making his savory Mexican dishes available to a wider audience, eventually giving rise to Haab Williamsburg. His unique culinary background is today readily apparent at Haab, which prepares innovative dishes such as the sumptuous snail quesadilla and exquisite duck taco. Haab is also renowned for its variety of homemade sauces, which have garnered rave reviews from restaurant-goers. With their second location, Espinoza, Zamacona and Velasquez say their dream of ultimately growing Haab into several locations is moving forward. But one thing will never change: their commitment to a family friendly environment where the quality of the food and service is always a priority.
