Hilliker Corporation Proves Hungry For Success

ST. LOUIS - July 30, 2013 - PRLog -- Hilliker Corporation, a St. Louis owned and managed commercial real estate company, is helping bring one of Chicago’s favorite sandwich shops to the heart of Clayton where a legendary restaurant once stood.

Potbelly Sandwich Shop will open its second St. Louis location at 12 S. Bemiston Ave. in Clayton by late Oct. of 2013.  The entire restaurant will be renovated, including changing the front façade to a more modern feel.  The shop’s menu features healthy toasted sandwiches, salads and sides with lots of vegan options.  

The 2,445-square-foot restaurant was the former home of The Fatted Calf, a local landmark that opened its doors in 1966 and fed the community for more than 40 years.  Hilliker Corporation’s Powell Kalish handled the tenant representation in this five-year lease commitment.

Franchise owners for both St. Louis stores are Todd and Angela Stimson and Dr. Lawrence and Monica Boveri.  The partners opened their Creve Coeur location at 11615 Olive Blvd. in Aug. of 2012 and have plans to open two more Potbelly Sandwich Shops in St. Louis by 2015.  The company, which was started in Chicago in 1977, has 270 locations around the country.

“We picked Clayton for our second location because we already have a huge fan base among business people who are familiar with this Chicago favorite,” said owner Todd Stimson.  “Customers love our experience, and it’s a natural fit for our neighborhood shop to be located in Clayton.”  Stimson said there are 88 Potbelly Sandwich Shops in Chicago, and the company plans to open a store each year in St. Louis for a total of 10 to 15 locations.
