June 4, 2013 - PRLog -- CHICAGO, Ill. – Each month, The Signature Room at the 95th® features one charity to receive 10 percent of sales generated from designated dinner items. Throughout the month of June, Careers through Culinary Arts Program (C-CAP) is the non-profit benefiting as the chosen Charity of the Month. Since the programs inception in 1993 by owners of The Signature Room®, Rick Roman and Nick Pyknis, more than 200 Chicago non-profit organizations have benefited with more than $1 million having been donated.

Careers through Culinary Arts Program (C-CAP) is a natural charity choice for The Signature Room® which is committed to culinary excellence.  The national nonprofit organization works with public schools to prepare high school students for college and career opportunities in the restaurant and hospitality industry.

Founded in 1990 by Richard Grausman, a well-known culinary educator and author, C-CAP has awarded $37 million in scholarships to students and donated $2.8 million worth of supplies and equipment to classrooms throughout the nation.  In April, President Susan Robbins awarded over $380,000 in scholarships and cash awards to 18 Chicago high school seniors during the awards ceremony hosted by The Signature Room®.

Designated dinner menu items throughout June will feature delicious options for every course. Starters include the steamed mussels, served with grilled artichokes, micro fennel, and topped with a citrus-wine broth; corn and shrimp bisque with chive oil and spicy fried popcorn shrimp; and the rapini salad, a delicious mix of heirloom tomatoes and spring legumes drizzled with mustard vinaigrette and served with a pea puree topped baguette. This month’s featured entrée, pan seared halibut is accompanied by grilled artichokes, anchovy aioli, and a cucumber-lemon salsa.

Mission statements of all Charity of the Month non-profits are posted on the restaurant’s website along with full details regarding the application and review process. All beneficiaries are chosen during an annual application review.
