Nov. 21, 2012 - PRLog -- Tracey Allen in her new book titled Easy Gluten-free Lunches and Snacks: Simple Cookbook features one recipe using only five ingredients can make four bread favourites - wraps, pita bread, crackers, and taco shells.

Problem 1:

Gluten-free can be confusing, especially for the newly diagnosed when they see how many different flours and mixes are used.

Solution:

Allen has created just one flour mix that is used for all the recipes in the book. There is no corn, no bean, no potato, or no soy flours, used.

Problem 2:

There is a perception that it takes a lot of time to cook from scratch.

Solution:

Allen designed the gluten-free recipes in the book to be as simple as possible, in fact one recipe is used four different ways to create different bread products while some snacks are only three ingredients and no bake option.

Allen created an author video showing the four bread products made using the one recipe.

When asked why she wrote the book Allen replied, "I believe in keeping it simple and believe it is healthier to cook from scratch, as well as, financially more sustainable. To share the simple tricks I've learned I hope to prevent others from going years and years without decent bread products among other things. I say this since when I first started looking at gluten-free books I found them complicated with a number of flour mixes, different ingredients, etc. Since I love to cook and don't shy away from substituting and experimenting I found these complicated cook books frustrating; I mean how do you substitute something when you don't even know what it is."

Included in the book are recipes for bread, hamburger buns, wraps, pita, tacos and crackers that are cheaper than buying them helping celiac and gluten intolerant people with their food budgets.

Published by Earth Haven, the book is available on Amazon in both Kindle (also viewable on PC/Mac, Ipad, blackberry etc.) and in colour paperback.
