PRLog - Oct. 24, 2012 - SALT LAKE CITY -- In the U.S., over 7 percent of the population suffers from gluten allergies.  For this reason, Zeto Life Sciences has developed a gluten-free pizza dough, to support consumers’ passion to continue enjoying their favorite staple.  Zeto Life Sciences, with Spedelli’s Pizza, is launching their long-awaited line of gluten-free pizzas. The gluten-free pizzas are made using the Zeto™ chia-based flour, as the unique healthy ingredient, and launched in response to the dietary needs and trends expressed by Spedelli’s customers.

"We are excited to offer such a tasty and healthy pizza crust to our menu," says co-owner Sam Spedale, of Spedelli’s. His brother Mac, with his trademarked curled-mustache, points out, "Our friends with gluten sensitivity were asking for our favorite pizza in a gluten-free version.  Now, anyone who wants a gluten-free choice, can try our awesome pizza."

According to the Celiac Disease Foundation (http://www.celiac.org), over 3 million people suffer from celiac disease. In a recent study by the Center for Celiac Research, as many as 20 million people in the U.S. suffer from gluten sensitivity and intolerance. Gluten intolerance, or celiac disease, is an inherited autoimmune disease where the small intestine is unable to accept gluten and becomes intolerant.  Gluten is a protein found in grains like wheat, barley and rye. The therapy for gluten sensitive and celiac disease individuals is to maintain a gluten-free diet.

In making the premium pizza dough, Zeto Life Sciences worked with their natural ingredients, improving elasticity of the dough with chia flour, which provided natural omega fatty acids, protein, antioxidants and fiber. “This pizza dough is uniquely different from all others, it is a first in natural gluten-free pizza, using a patent-protected chia flour, that contains heart-healthy omega fatty acids, proteins, and fiber.  The taste is phenomenal, AND it is healthy, that’s a winning combination! I can’t wait to have a slice.” Says Dr. Nikos Linardakis, Innovation and New Technology expert on the pizza project.
