So chocolate makes red wine taste silkier, while the wine makes chocolate taste richer. Not to mention," he adds, "the flavor combination is just plain sexy."

Wineries often serve a chocolate dessert as the last course at winemaker dinners. “We want to give them a really memorable food-and-wine pairing for their last course,” explains Chef Casey Wolcott,  “so we often turn to chocolate, perhaps with berries or unusual ingredients like herbs, because chocolate is just so versatile and you can really deliver a ton of flavor in a very small helping. It's a good way to make a great impression that no one can refuse."
