Tengku Norlinda began her career in 1981 as a cook in the Mara Institute of Technology, from where she earned a pre-graduation apprentice degree in 1983, following which she served in various hotels in Malaysia, beginning as an apprentice and working her way up to Malay pastry chef before moving to the Mayfair Hotel in Dubai in 1997 as Executive Sous Chef.
