Co-owners Erik Hustad and Gabe Lovelace put a great deal of pride into their handcrafted burgers, said Hustad, who drew his inspiration for Honest Abe’s from a restaurant in Seattle, where he studied culinary arts at the Art Institute of Seattle. “I thought Lincoln would love something like this,” said Hustad. “We like to come up with fun combinations that we believe taste good.” The “Greatest Burger Ever,” “The Aphrodite,” and “The Matador” are among the selections. Vegetarians can substitute a marinated portabella mushroom for beef on any burger. The menu also includes salads, Freedom Fries, Crunchy Fried Chicken Fingers, and root beer floats. Hustad and Lovelace are no strangers to the food business. In November, they opened GUP Kitchen, a mobile restaurant serving high-quality cuisine. When it came time to find a location for Honest Abe’s, they were drawn to the location at Meadowlane Shopping Center – a site near the neighborhood where Hustad grew up and one that Hampton tailored for their needs. “I love east Lincoln. We located where there are lots of families, college students and people who work in the area” he said. “We liked the idea of creating a unique, fun place that would make other neighborhoods jealous.” Beyond finding an ideal location, Hustad said the space suited their needs with an extra-large kitchen from which Hustad and Lovelace can cater, and run GUP Kitchen and Honest Abe’s.
