Claude Godard is not a mere "Chef". He is a Maître Cuisinier de France, a French association of notable chefs whose goal is to "preserve and spread the French culinary arts, encourage training in cuisine, and assist professional development."
Chef Godard shared a recipe for his fresh goat cheese soup with escargot. When asked why this recipe, Godard replied “Cold soup is always very refreshing. This one has a little more texture because of the silkiness of the goat cheese. It’s more than a soup. It ‘s a perfect appetizer. We think that escargot is a winter dish, not when it is prepared this way”
