By: Davio's Homemade Sweet Pickles Ingredients: Organic European Cucumbers Water Sea Salt Pickling Liquid: Apple Cider Vinegar White Sugar Brown Sugar Pickling Spice Directions: Cut ends off of cucumbers and cut in half lengthwise. Remove seeds with a melon baller to cleanly remove seeds. Bringwater and salt to a boil and pour over cucumbers in a large container. Weigh cucumbers down in the brine with a perforated pan and keep in a cool, but not cold, place for one week. On the eighth day, drain from brine and rinse cucumbers. Bring fresh water to a boil & pour over cucumbers to cover. Weigh cucumbers down again and let stand for 24 hours then drain. For the pickling liquid, combine all ingredients and bring to a boil with the spices tied in a sachet. Pour boiling liquid over cucumbers. For each of the next three days, drain liquid, add an additional cup of sugar (1/2 white, 1/2 brown) bring to a boil and pour back over the cucumbers. 24 hours after thethird heating, the pickles are complete.
